Why I added curry as a signature meal for my services.

I think curry is a forgiving kind of food.

It doesn’t mind if your cuts aren’t even.
It doesn’t complain if you don’t measure exactly.

Even if your attention drifts for a moment, it somehow works things out.

As a dish, it’s remarkably generous.
That’s why curry is often one of the first meals kids help make.

You don’t have to aim for perfection.
You don’t need to know the “right” way.
Curry meets you where you are.

On busy days.
On tired days.
On those evenings when you just don’t have much left.

Whatever goes into the pot, it takes it in, and turns it into something comforting enough.

What makes curry special isn’t technique.
It’s its capacity to hold things together.

Across India, Europe, and many parts of Asia, curry shows up in different forms.
It’s loved around the world because, in one way or another, it knows how to adapt.

Japanese home-style curry, in particular,
has learned that generosity from the start.

It grew up in kitchens where families needed food that was reliable,
gentle enough for kids, and flexible enough for real life.

That’s why, in our house, curry tends to stick around.

We make a little extra on purpose.
Not because we have a plan,
but because we know it will come back.

The next day,
it changes slightly,
and returns to the table as something new.

There’s something human about that.

Never quite finished.
Still evolving.
Deeply generous.
Quietly comforting.
Ready to adjust.

That’s the forgiving nature of home-style curry.

So tonight, we’re having curry.
